Travertine doesn't HAVE to be sealed to perform well. Many travertine installations look beautiful and last decades without ever being sealed. Sealing is a personal choice based on how much stain protection you want, how much you want to control color development, and how much maintenance you're willing to do. Stain protection: Sealing makes travertine less porous, so stains have less chance to penetrate. Spilled wine, sunscreen, leaf tannin, and other potential stains are easier to clean off sealed travertine.
Color preservation: Some sealers slightly enhance the natural color and slow the development of natural patina that comes with aging.
Easier cleaning: Sealed travertine generally requires less effort to clean.
UV protection: Some premium sealers offer slight UV protection, slowing color change in extreme sun exposure.
